Make sure that the cooling system bleeding was done correctly. This is a common problem that many non BM shops seem to miss out on and it will cause overheating.
 
I agree with Beemernut, proper bleeding is very important. when I got my M54B25 used, I basically overhaul the cooling system, changing many parts and service the radiator, my temp gauge is always slightly below middle even in reasonably long idling. And I use Mercedes coolant.
IMHO, engine cooling is a system ,when some parts begin to fail or not performing up to the mark, it will affect other components and affect the overall performance.

Just my 2 cents.
 
I think that if your car is not overheating (steam from the radiator) then you should not worry about instrument readings which are 1/4 inch or more below the red mark on the temp gage. Just make sure that the cooling system has been bled properly and that you have good coolant in it.
