Rather than live with the rubbing, you can try what Zul suggested, which is to lessen your positive offset by using spacers. Of course, that may give you rubbing on the fender instead when your suspension is compressed. Then you can try rolling the front fenders.
There are lots of guys on 19" wheels and fat tires without any body rubbing problems. I'm still of the opinion that you should get your whole set up checked by a professional wheel and tire shop before you spend a few thousand more changing your tires. It'll be $$$ wasted if the problems are still there. Eg, on your suspension, you said you went back to your originals after trying the cross coilovers. But looking at the photo, your ride looks agressively lowered, even lower than my stock M-suspension. So are you certain that it came with original stock suspension? Get all these things checked out by a pro, take the guesswork out of it, and your solution won't be expensive guesswork either.
