hi tyke, the dashboard is a whole piece of molded pu. Pu is a whole piece of foam including the skin ... its called integral skin. This grade of pu is also used in chairs. The two pu liquid chemical components (namely TDI & polyol) are mixed together and poured into the mold. The skin is formed from the heat generated from the mixing of the two products.
The integrity of the whole piece of plastic would be affected when you remove the foam ... maybe wrapping a leather skin ontop of the dashboard may mask the cracks and protect it in some way like putting a cover ontop. If i'm not mistaken once it starts cracking it doesn't stop unless major repair is done to it by using fillers and coatings ... even so i have my doubts.
That is why Dashboards of new cars are made of poly carbonate or harder pu so that the dashboards last longer though i don't think the cars would

bro wht they do is to strip teh old pvc wrap and scrape off the old brittle sponge and thn replace it with a leather(real & not pvc) of our choice...
only thing is tht it wont b as padded as an ori dash....but at least it'll b real leather and no worries bout sponge getting brittle again...
havnt seen it done to an e30 but have seen a few rolls royces and yatchs being done up there though...
if ur interested its between the summit usj and the giant hypermart...
